Pureed Soup
I just have to share this because it is totally amazing and I am the most awesome MOM for discovering this. My children are not big soup eaters. They don't like the mysterious chunks of vegetables floating around or the stringy chicken. But soup is so easy to make and you can put in all sorts of vegetables and I love it. It was a complete shock to me that all of the children would gobble up Cream of Broccoli soup. They refer to it as "Green Soup" and actually request it for dinner sometimes. So, I tried an experiment...........I put in all of the ingredients for chicken noodle soup, except the noodles, and let it get really tender. Then I blended it up, added the noodles and the children ate it up. Interesting. I tried it on Italian Potato Soup tonight (like the oh so delicious soup at Olive Garden). This is a soup that I have tried to get my children to eat and have heard nothing but complaints and usually thrown more than half of their bowls away when I am exhausted of trying to get them to eat "one more bite". But tonight I served Pureed Itaian Potato Soup. Eliza declared that it was fabulous soup and she wanted to know what the secret ingredient was. The secret my friend.......................the blender!!!!!!

This is a great discovery. The blender does amazing things. I make a zucchini soup, which is alright not blended but great blended. In fact a couple years ago some of us got together at Emily's (they were canning I think but I don't remember what I was doing there). Anyway I brought the soup. Emily made mac and cheese. the kids had soup poured on the mac & cheese. They loved it and asked for more.
